The Haugh unit is an indicator specified by the US Department of Agriculture's egg product standards for testing and indicating egg freshness. Currently, this indicator is also used in China. This indicator is mainly divided into four grades: AA grade: 72 or higher; A grade: 71-60; B grade: 59-31; C grade: 30 or lower.
